The Chord pattern is quite simple really, it's mostly in C Major, it's the choice of lead/melody notes, played against those fairly standard simple chords, that gives that gypsy/middle eastern feel to it, and is probably what also gives that bluesy flavour. But yeah as you say some rhythm changes might add some interest. If I do that and perhaps try something like a parallel minor say go to a C minor and play the corresponding C minor chords that also might be interesting.
